It was there Dario first practiced the skills necessary in making authentic pasta, potato gnocchi, and sauces. It was there he began to understand and enjoy braising and roasting meat, fish and poultry. It was there he learned the screaming that would take place in an Italian family kitchen if something were to go wrong!
After serving in kitchens in Italy, Switzerland and England Furlati came to the United States, where he worked with and became partner in several prestigious Italian restaurants. Today, Ca’Dario is his alone and the love he has for it and his customers is evident.
